Beans

Cooking Instructions for our Beans/Mixes:

Rainbow Soup Mix:

Ingredients:
1 1/2 C Bean Mix
1 tsp salt
1 C chopped onions
1 C chopped celery
1 C chopped carrots
1/2 C diced green pepper
1/2 C finely chopped fresh parsley
2 Tbsp oil
1 clove garlic, chopped
1 C tomatoes, chopped
1 tsp herbs of choice, finely chopped
2 quarts water or broth

Instructions:
Soak beans for 4-8 hours. Drain water. Heat 2 Tbsp oil in pot and add the carrots, celery, onion, and garlic. Saute until aromatic. Add the water or broth and the drained beans. Cook for about 1.5 hours or until desired tenderness. Adjust salt and spices to taste.

Ingredients:

1/2 lb or 1/2 cup chili beans soaked for 8 hours
1 lb meat or meat substitute
1 medium onion chopped fine
2 Tbsp olive oil
1 – 15 oz can organic tomato sauce
1 -28 oz can crushed tomatoes
1&1/2 Tbsp chili powder
2 cloves garlic, chopped
1/2 tsp paprika or smoked paprika powder
1/4 tsp cayenne powder (optional)
Salt and black pepper to taste
1 Chopped and seeded green chili or jalapeno pepper ( optional)

Instructions:
Soak beans, drain.
Saute onion in olive oil in 1 gallon pot.
Add meat or meat substitute and cook.
Drain off excess oil if present.
Add soaked beans, tomato sauce, crushed tomatoes, chili powder, paprika, cayenne and salt and black pepper. Bring to a boil then cook for an hour stirring every 5 minutes on low temperature until done.
